Homemade Creamy Chicken Noodle Soup

Homemade Roux:
(aka thickener for soups, gravies, and sauces).
Ingredients: 3 TBLS Butter, 3 TBLS Flour, 1 Cup Milk
Directions: In a medium saucepan on medium/high heat, whisk butter until melted. Quickly whisk in flour, one tablespoon at a time until bubbly. Add milk slowly while whisking quickly. When mixture has become thick and bubbly, take off burner and add to any soup, sauce or gravy to thicken things up. 

Homemade Egg Noodles:
Ingredients: 1 egg, 1 cup flour, pinch of salt, 2-3 T milk.
Directions: Combine by stirring in a bowl with a fork - (adding flour little bits at a time) and then knead with fingers. Wrap ball of dough in saran wrap for 15-20 minutes (let sit on counter), then cut into 2 balls of dough. Roll out one ball at a time on floured surface. Make dough thin. Cut into skinny strips with pizza cutter (about 1 1/2-2" long), let sit for another 15 minutes or so. Coat noodles in flour and toss on counter to prevent stickiness. Once dry, add them to this soup or your favorite pasta dish!

Homemade Creamy Chicken Noodle Soup - Its Divine!
Ingredients:
2 Tbls Olive Oil
1 small onion (diced)
2-4 carrots (chopped)
2-4 celery stalks (chopped)
1/2 tsp. ground cloves
2-4 cups chicken broth
2 chicken breasts or 5-6 chicken tenders (cooked and cubed)
To taste: Garlic powder, cayenne pepper, parsley, bay leaves, thyme, rosemary, salt and pepper
1-2 cups milk (just to make the soup go farther)
1-2 cans cream of chicken soup or homemade roux recipe (look above)

Directions:
In large pot, stir onions in oil until clear. Add carrots, celery and chicken broth. Simmer 5 minutes. Add cream of chicken soup or homemade roux recipe, chicken, and seasonings. Simmer 15 minutes. Add egg noodles while whisking soup, bring to a boil. Add milk if needed. Simmer 10 minutes on medium, then serve with homemade rolls if desired. :)
